Just before pancake day arrives, I thought I would share my gluten-free, dairy-free pancake recipe. Its super easy and you probably already have all the ingredients in your kitchen. These pancakes work best if you give them time to thicken up, I often make these at night for the next morning to save time. They are super thick, fluffy and taste delicious.
50g of gluten-free oats (you may need to add more to thicken the mixture)
4tbsp dairy-free yoghurt – I use Alpro vanilla flavour
1tsp baking powder
Add all the ingredients in a blender and blend until smooth. The mixture will thicken with time.
When ready to cook, heat a pan on full heat and spray with low cal cooking oil. When the pan is heated, turn the heat down to a medium heat and pour the mixture slowly into the pan. I tend to cook these one at a time.
You will know when you pancake is ready to flip when you see bubbles form and the edges are cooked. Then flip (or slide onto a spatula as I do!). You can serve with anything you fancy. I like to heat up frozen summer fruits and drizzled with honey, delicious!
